I don't even think that there's a copyright issue any more with ADJL as Disney simply cancelled it >.> But well the wiki dudes are a little annoying on that

Unfortunately they DO still have copyright over it. Just because they cancel it doesn't mean they don't still own it, especially if it's still being aired (albeit in reruns) on their TV channels. The only way they'll no longer have the copyright anytime soon is if they literally just let it go, either by selling it or otherwise. Else, even thirty years from now, ADJL will still be under the ownership of Disney.
And thus, it's still going to be extremely hard to pull off an unofficial third season due to that. I think the only way around it is not selling the season, if it's made, for profit. I could be wrong there. Regardless, I think that's the way this unofficial third season would be getting around the copyright issue.
I can see why the Wikipedia editors took it off, though. You can say it's by a legitimate animation company all you want but when it all comes down to it, it's still a fan-made enterprise. So that would be to say that anyone else's little fan-made season could get added to Wikipedia, regardless of its quality. Hell, you could even start delving into the realm of fanfiction, since that too is something fan-made. If you allowed one, you'd have to allow them all. So it's not really that surprising that they took it off.
